Sweet Potato Muffins

INGREDIENT

  1. Preheat the oven at 350 F. In a bowl, mix the bran oats, whole-wheat flour, sugar, cinnamon, baking soda and baking flour, salt and the grated apples.
  2. Add the sweet potatoes, egg, egg whites, oil, yogurt, and mix. Stir until humide. Spray Pam on the muffin molds or paper cups. Add about ¼ cup of the mix per muffin.

COMMENTS

Bakes about 20 muffins.
Variation: Add 1 cup of raisins to the preparation if desired.
Serve with the Crab au gratin.
